La pandemia generata dal Coronavirus SARS-CoV2, che sta facendo morti in tutto il mondo, soprattutto fra gli strati sociali che, per le loro stesse condizioni di vita, non sanno come difendersi, è il risultato di diversi fattori e costituisce un ennesimo avvertimento, dai più inascoltato, sulle reali condizioni del nostro pianeta e sulla possibilità che la vita possa continuare a riprodursi in esso. Il volume, nell’analisi della pandemia, presta una particolare attenzione alla dimensione economica, muovendo dalla convinzione che vi sia una stretta correlazione tra il modo di produzione capitalistico – la manipolazione della natura, lo sconvolgimento degli assetti ecologici e della biodiversità che esso determina – e la genesi degli eventi pandemici. Per sviluppare al meglio questa impostazione e per connettere la sfera economica agli altri aspetti della vita sociale il volume presenta contributi di vari specialisti (biologi, virologi, medici, sociologi, filosofi, economisti, giuristi), dotati però di una sensibilità antiriduzionistica. Ossia capaci di focalizzare la dimensione di loro pertinenza senza offuscare le complesse relazioni tra questa e gli altri livelli della vita sociale.

In un mondo in cui l’occhio e tutti gli altri sensi umani sono sottoposti ogni giorno a una serie di prove psicologiche in forme e modalità accresciute, continue e per lo più inconsapevoli, l’arte di Duchamp rappresenta, ancora oggi, un esercizio per collaudare non solo la nostra capacità di vedere e percepire, ma anche di esistere. Se vivere significa emanciparsi dall’incatenamento a uno scopo determinato, allora l’arte, quando funge da “test”, può servire a misurare, di tanto in tanto, quanto siamo davvero consapevoli della nostra libertà. A partire da questo presupposto, Marco Senaldi ci conduce in un inedito e avvincente viaggio “a ritroso” nellʻopera di Marcel Duchamp.

In the current revival of studies on Alexander the Great, literature has until now neglected – also because of the scarcity of testimonies – its ‘poetic’ side. Choerilus of Iasus, the most important among the poets who accompanied Alexander’s endeavours, represents no exception. For this reason, the book delivers a complete study of Choerilus’ works, life and (mis-)fortune. By doing so, it reassesses philologically and historically a blind spot in present-day research and therefore illuminates further the field of Alexandrography as well as its literary reception. The volume entails first of all a new edition of all the testimonies and fragments pertaining to Choerilus of Iasus, updating and expanding the latest collection edited by H. Lloyd-Jones and P. Parsons in the Supplementum Hellenisticum (1983). Following up, the book develops in four chapters an analysis and discussion of the texts collected in the critical edition. The fifth concluding chapter retraces and contextualises the history of modern studies, from the Renaissance on, concerning the elusive figure of Choerilus.

The book will contain a detailed description on the historical aspects of cheese manufacture, a culmination of historical information on the most traditional and worldwide popular Italian cheese varieties. An overview on cheese production is also included, covering the main general aspects. An overall classification of Italian cheeses will follow, aiming to categorize all the cheese varieties that have a tradition and/or an economic importance. Based on a large literature review, the core of the book will include descriptions cheese making traits which are unique to Italian cheese biotechnology. In particular, the milk chemical composition, the use whey or milk natural starters, some technology options (e.g., curd cooking), the microbiota composition and metabolism during curd ripening, especially for cheese made with raw milk, and the main relevant biochemical events, which occur during the very long-time ripening, will be described. The last part of the book will consider a detailed description of the biotechnology for the manufacture of the most traditional and popular cheeses worldwide.
