Contemporary Developments in Nutrition
Abstract: Increased awareness and desire for information on the part of the public and advances in nutrition science arebrought together in a current review of prominent nutrition topics. A general understanding of basic nutrition is assumed, yet the material is presented in a format appealing to the general reader and is supported with diagrams and illustrations to help clarify the scientific information. Some of the broader issues discussed are the American food supply, infant feeding practices, nutrition in pregnancy, diet and child behavior, obesity, oral health, vegetarianism, and dietary influences on cancer. The more specific aspects of human nutrition described are related to the body's use of and needs for carbohydrates, fiber, fats, protein, vitamins, trace elements, and iron.
