Abstract: A reference book for food sociologists and food and nutrition professionals presents numerous annotated references concerning food, nutrition, and health-related dietary concerns of the princiopal US ethnic groups. Information is provided on: cultural, social, and economic markers; food habits; general dietary, nutritional, and related health problems, and unique practices of the various ethnic groups. Following a discussion of food habits and the characteristics of ethnicity, the following 6 sections of the book present general information and annotated references separately for black, hispanic, chinese, japanese, other asian, indian, middle-eastern, and mediterranean americans. A separate annotated section provided mixed ethnic references and general food habit information. Resources for recipes are given at the end of the annotated references for each of the ethnic sections, and tables of food composition are appended.
