Abstract: Changes in the food industry and the demands of consumers for healthier products are examined. Concerns are on the relationship between diet and diseases such as heart attacks and cancer. Such trends in consumer demands affect farmers, manufacturers, and retailers. Other topics covered are: Developing policies of the U.S. and other countries; 2) Setting dietary goals for Britain; 3) Achieving dietary goals via local food policies, food industry, media, promotional material, and nutritional labeling; and 4) Implications of the food revolution on the retailers, manufacturers, and the producing sectors of industry.
